  • 1 oz (about ½ cup) Finely shredded low-fat cheddar cheese
  • 1 tbsp Canned chopped green chilies, mild or to taste

Directions

Makes 4 3-inch pancakes

  • Spray a small microwave-safe bowl with olive oil spray. Add the egg whites. Set the bowl aside.
  • Place a small nonstick skillet over medium heat and add the bacon. Cook it for about 5-7 minutes, stirring occasionally, or until the bacon is crisp. Add the onions and cook until just heated. Remove the mixture from the pan and cover it to keep it warm.
  • Meanwhile, microwave the eggs for 30 seconds on low heat. Continue microwaving them in 30-second intervals until they are just a bit runny on top. Then using a fork, stir them to break into large “scrambled” pieces. By the time you “scramble” and stir them, the residual heat should have cooked away the runniness. If they are still undercooked, cook them in 10-second intervals until just done.
  • Stir the bacon mixture into them.
  • Place a nonstick skillet large enough for the tortilla to lie flat over medium-high heat. Add the tortilla to the pan (no need to add any fat). Sprinkle half of the cheese over half of the tortilla. Then sprinkle the bacon and onion mixture and chilies over that. Spoon the egg evenly on top, then sprinkle the remaining cheese.
  • Fold the bare half over the filled half. Cook it for about 2 minutes until the cheese is beginning to melt and it is lightly browned in spots. Carefully flip it and cook it another 2 minutes until the cheese is completely melted.
