Crispy Fries

  • 2 large potatoes
  • 1/2 gal peanut oil
  • Sea salt

  • Orange juice
  • Champagne

Mimosas

  1. Fill a Champagne flute halfway with orange juice.
  2. Top off with Champagne.

Croque Monsieur

  1. Mix chopped parsley with Parmigiano-Reggiano.
  2. Butter bread on one side.
  3. Layer ham and cheese on the unbuttered side of two bread slices. Top with the remaining bread,buttered side out.
  4. Dust each sandwich with the cheese and herb mixture.
  5. Toast in a preheated skillet, about 3 minutes each side, until each side is golden brown and the cheese is melted.

Crispy Fries

  1. Slice the potato into 1/4-inch slices.
  2. Heat peanut oil to 325 degrees F in a deep pot.
  3. Fry the potatoes for 5-6 minutes, gently stirring to cook evenly.
  4. Drain fries on parchment paper.
  5. Toss with sea salt.
