I canned my own tomatoes, grew onions,  garlic and herbs as well as dehydrated my own tomatoes. We also raised the lambs, but our lamb meat was so popular that we sold it all before I had a chance to use the shanks. I bought my lamb shanks from another farm 7 miles down the road. This recipe focuses on local food and local farmers. Everything can be bought at a farmers market in the Fall (capers and olives excepted)."

Since you are buying local produce, there is less of a carbon footprint because of the proximity to the farms. There is no meat in this dish as well, again lessening the impact on the environment."

We are surrounded by organic farms and local producers of fresh healthy ingredients. You should be able to find all of your ingredients, minus the nutmeg, from local producers, even the Parmesan."
