Gramercy Tavern
Chef Michael Anthony is passionate about sourcing local, traceable ingredients for his ultra-seasonal menus at Gramercy Tavern. He is inspired by individuals who share this commitment, such as Dan Wood and Amale Andraos, from WORK Architecture Company. This husband-and-wife duo created P.F.1 (Public Farm One), an urban farm installation at P.S.1 Contemporary Art Center, calling attention to the importance of argiculture and eating locally. P.F.1 resonates among a population who seeks a stronger relationship between urbanism and ecology, giving hope for a better future.
"I want to live in a world that protects our access to a wide variety of delicious foods, with a culture that celebrates our heritage and traditions, and at the same time values its constant evolution. I enjoy creating food memories that are rooted by flavor to one particular season and place. Living close to nature is the greatest luxory we can afford."—Michael Anthony
