While often described as self-taught, chef Liza Queen has actually been perfecting her craft for two decades from a variety of sources: alongside her mother, grandmother, and aunties; with an education at Oberlin College; under the tutelage of hardworking, unknown chefs in Portland, OR; and from cookbooks, with Julia Child, James Beard, Diana Kennedy, Elizabeth Daved, and Marcella Hazan among her favorites. She is also quick to give credit to the local farmers whom inspire her menu that changes daily. Here, she shares a laugh with one of her beloved cheesemakers, Jonothan White, from Bobolink Dairy.
