Anolon Meets Chefs at Forefront of Movement in Sustainable Cuisine
Mission:
Chefs Collaborative works with chefs and the greater food community to celebrate local foods and foster a more sustainable food supply. The Collaborative inspires action by translating information about our food into tools for making knowledgeable purchasing decisions. Through these actions, our members embrace seasonality, preserve diversity and traditional practices, and support local economies.
This fall, Anolon® was delighted to participate as a sponsor of the Chefs Collaborative National Summit, an informative two-day forum in Chicago for chefs, farmers, food artisans and educators in the culinary field. More than 200 talented and progressive chefs from around the country came to the Summit to learn how to bring sustainability to the table, a topic that is at the heart of the mission statement of Chefs Collaborative, and one that parallel’s Anolon’s own dedication to helping home cooks Create a Delicious Future.
Chefs Collaborative is a nonprofit organization that works with chefs and the greater food community to celebrate local foods and foster a more sustainable food supply. The collaborative advocates for sustainability in the greater food community and connects chefs with sustainable food producers.
At the National Summit, held at the Kendall College -- a leading culinary school in Chicago, and the Green City Market, a vibrant farmer’s market in Lincoln Park -- attendees met and listened to leading chefs, farmers, educators, policy makers and authors on a wide range of topics, such as:
• Taking Steps on the Path to Sustainability
• Whole Hog: A Butchering Workshop for Pork Enthusiasts
• Looking at our “Carbon Foodprint”: Food Choices and Climate Change
• Balancing Our Values when Sourcing our Seafood
• New Tastemakers: Chefs and Entrepreneurs Changing the Game of Sustainable Food
• Meat: A Defensible Part of Sustainable Cuisine?
• Connecting Farmers, Chefs, and Community: How Farmers Markets Strengthen Local Food Systems
Naturally, any gathering of chefs means there will be some incredible food to enjoy, and the closing session lunch at Café Brauer in Lincoln Park did not disappoint. The multi-course menu, served family style to attendees in a beautiful landmark building was a veritable feast of delicious, locally sourced foods prepared by an all-star team of acclaimed Chicago area chefs, farmers and food artisans.
