- Prep Time: 15 minutes
- Cooking Time: 20 Minutes
- Wash dandelion greens thoroughly.
- Boil water then add greens, cooking until tender. Drain and set aside.
- In frying pan, heat enough oil to coat pan interior.
- Fry minced garlic until slightly browned.
- Add drained greens and stir in pan until coated.
- Add drained beans and cook for about 10 minutes.
- Salt to taste. Add red pepper flakes if desired.
- Serve with crusty Italian bread.
The Story Behind the Recipe: One day when I was a young girl I was sitting at home with my mother when a storm broke. It was a downpour, with thunder and lightening. I became very upset because I knew my grandmother was out there walking around with her friend. Of course, my mother told me not to worry and that she would be home soon. Some time passed when all of a sudden I heard a commotion at the door. My grandmother was finally home, totally drenched from head to toe. I was relieved to see her but curious about what was in the bag she was carrying. She brought the bag to the table and opened it up to reveal a great prize - dandelion greens! She and her friend had picked them from a nearby grassy area off one of the main streets of our neighborhood! She was very proud of this great foraging find and she said it reminded her of her home in Italy. That evening we ate a delicious dish of dandelion greens and white beans!
