Ingredients
- 1 1/2 cup All-purpose flour
- 1/3 cup Granulated sugar
- 1/3 cup Brown sugar
- 3/4 tsp Salt
- 1/2 cup Butter, softened
- 1 Egg, separated
- 3 tbsp Milk
- 1 tsp Vanilla extract
- 1 cup Pecans, finely chopped

Directions

- Sift together the flour, sugars, and salt in a medium mixing bowl.
- In a small bowl, thoroughly mix the butter, egg yolk, milk, and vanilla extract.
- Stir the wet ingredients slowly into the dry ingredients until just combined. Form the dough into balls the size of small walnuts.
- Place the balls on an ungreased baking sheet, 1 1/2 inch apart. Flatten each ball until 1/16 inch thick, using a rolling pin (or drinking glass) that has been greased and dipped in sugar.
- Brush the top of each flattened ball with beaten egg white, and sprinkle with finely chopped pecans.
- Bake 8 to 10 minutes at 375 degrees F, taking care not to overbake.
