- 1 half head Speckled lettuce
- 2/3 cup Sugar
- 1 tsp Dry mustard
- 1 tsp Paprika
- 1/3 cup Honey
- 1/3 cup Vinegar
- 1 tbsp Lemon juice
- 1/2 tsp Salt
- 1 cup Olive oil
- 1 tbsp Poppy seeds
- 2 whole Oranges
- 1/3 cup Shaved parmesan

- Rinse the lettuce well, blot with paper towels, and tear into fork-sized pieces.
- In a small bowl, mix sugar, mustard, and paprika. Add honey, vinegar, lemon juice, and salt. Combine well, and continue beating while slowly adding in the oil. Stir in poppy seeds.
- To supreme the oranges, first peel them and trim off excess pith and the ends of the oranges with a sharp knife. Cut towards the center of the orange as close to the membrane of each section as possible, creating wedges.
- Stir the orange sections into the dressing, and toss with the lettuce. Garnish with freshly shaved Parmesan.
