Salad

  • 3 cups Loosely packed baby spinach leaves
  • 1/2 cupSliced button mushrooms
  • 2 tbsp “Warm Bacon Dressing,” reheated, if necessary

Dressing

  • 1 tbsp Dijon mustard
  • 1 ½ tbsp Honey
  • 2 tsp All-purpose flour
  • 1/4 cup Fat-free, lower-sodium chicken broth
  • 2 tbsp Cider vinegar
  • 3 slices Center-cut bacon, finely chopped
  • 1 Garlic clove, minced
  • 2 tbsp Shallots, minced
  • To taste Black pepper

Spinach Salad with Warm Bacon Dressing

Directions

Makes 1 salad and approximately 9 tbsp of dressing

Salad

  • In a medium serving bowl, combine the spinach and mushrooms. Add the warm dressing and toss until combined. Serve immediately.

Dressing

  • In a medium re-sealable plastic container, whisk together the mustard, honey, and flour. When smooth, slowly whisk in the chicken broth then vinegar.
  • Place a small, nonstick skillet over medium heat. Add the bacon and cook, stirring frequently until the bacon is crisp, about 4-6 minutes. Stir in the garlic and shallots and reduce the heat to medium. Cook them for about 30 seconds, or until fragrant.
  • Whisk in the dressing mixture and let it reduce until thickened slightly, stirring frequently, about 1-2 minutes. Season with pepper. The dressing can be made up to 5 days in advance and refrigerated in an airtight plastic container then reheated before use.
