Fresh Strawberry Margarita

Skip the sugary mixes and blend strawberries, lime juice and a touch of agave syrup to sweeten this crowd-pleasing party drink. Agave syrup is sweeter than simple syrup, so about half as much is needed for sweetening beverages. Agave syrup and tequila are both made from the agave plant, so they are a naturally good combination.

Yield: 4 1/2 cups

  • 1 pound fresh strawberries, stemmed
  • 2 tablespoons lime juice
  • 1-2 tablespoons agave syrup
  • 1 cup ice cubes
  • 1/2 cup tequila
  • 2 tablespoons Cointreau
  • Kosher or table salt for glasses*

  1. Combine strawberries, lime juice and agave syrup in blender jar. Cover and blend until pureed. Add ice and pulse until ice is well crushed. Blend in tequila and Cointreau. Adjust sweetness as desired with agave syrup.
  2. Pour into salt-rimmed glasses if desired, or refrigerate blended margarita until ready to serve.

* To coat glass rims with salt:  Spread a thin layer of salt on a plate.  Rub a piece of lime along rim of glasses; dip and twist rims in salt until coated. Coarse Kosher salt makes a nice coating.
